Depends on what species it is. Seems there are only 3 acceptable and edible types. I honestly don't know what species they are.

Snails are invasive. If you DO raise them, then you had best make certain that any escapees will die over the winter: otherwise there are probably many, Many government agencies waiting to shut you down.

Of course, if they DO die in your winters, then all you need to do is find a market!

Now, I have HEARD that they are all edible, but only a variety or two is acceptable to snail eaters. Alas, that was years ago and I remember nothing more!
