Smoked Meats

Well today I fired up our smoker and smoked a variety of meats. I smoked some venison that I had marinated and cut into strips for jerky, I smoked three home raised chickens, two sirloin steaks, ten chicken breast fillets and a beef chuck roast. I then divided everything into small portions and froze them for future use. We can thaw and add to lettuce salads or rice or pasta as we desire and have convenient yet tasty meals in a short amount of time. I was not planning to do as much but after I got the smoker going I just kept at it all day. I am sure we will enjoy it.

I've never smoked anything, but it's something I'd like to do sometime. What you've done all sounds delicious! Smoked chicken I never even thought of!

Congratulations on your smoking session. Sounds like you have some mighty good food in the freezer.

I like to make pulled pork from Boston Butts. Shred it. Put in meal sized packages sealed with a FoodSaver. Later drop a bag into boiling water to defrost and heat. True heat and eat! I'm getting hungry just thinking about one of those Q sandwiches!.

Whole pork loins cooked low and slow, then cut into meal sized portions and vac sealed makes for some mighty fine eating, too.

My DH loves to cook a bunch of meats ahead in his smoker too. If your smoker allows you to maintian very low temperatures, add 1# chunks of cheese towards the end of your cook and let the smoker cool with cheese inside. Low temps, below around 120 are what keep the cheese from melting to much. Mmmm. Smoked cheese.

I smoked a batch of my home made andouille sausage yesterday. Smoking seems to intensify the flavors of this already spicy sausage. Then we had to make up some red beans and rice to go with!

when my fil was alive and able he had a huge smoker, he would freeze fish all year long and he would add them with meat to the smoker..and they were fantastic..esp the wild caught coho
