Squash question

Is this squash "ready" to pick or does it turn all white first?

Buttercups. Let 'em harden a bit outdoors, try to make sure the stem is on, and store in a cool dry place. If the stem came off, use 'em faster. Buttercups generally store longer than acorn or butternut. In general, wit to pick winter squash until the vine is dying or the squash bugs are starting to glom onto the squash itself.

Quick cook - cut in half, scoop out seeds, slather halves with butter, add a bit of maple syrup or brown sugar, place in microwave until soft - usually about 10 minutes.

The underside should turn a deep yellow-orange to orange color, and the stem should get mostly a light brownish color.
