I think you can use any berry jam recipe. That's what I plan on doing this year.
Dried elderberries are a wonderful antioxidant too. That might be something you would want to consider doing. We make tea out of it and it seems to help with cold and flu symptoms.

Aside from jam/jellies, anybody have any other good uses for these berries? There are tons of them around right now, but Im not much for jams and the likes. Maybe some kind of chutney, or a good sauce for salmon?

They are suppose to be medicinal. Some people make syrup and use it to ward off colds.

I bottle the juice and use it during the year. I add a little to the kefir/whey powder shake I drink every day. (I also add a lot of other goodies to it.) I've also made elderberry syrup to pour on waffles. The syrup is good on ice cream, too.
