Fudge recipes, please!

Looking for some fudge recipes using cocoa (from the barter board- yum!)
and milk- also wondering how far in advance can I make this before Christmas and store in fridge- while we still have goats milk, would like to get on this project now. Thanks!

Here's my recipe:
1/2 cup butter
1/2 cup cocoa
1/4 cup milk
1 tsp pr more vanilla extract
dash- 1/4 tsp salt
2 cups (or more depending on consistency) powdered sugar

In a good sized pan, melt butter. Remove from heat. Whisk in cocoa, salt, vanilla, milk, and lastly, powdered sugar. Blend well. Add to a buttered dish before it cools. That's it! Put in fridge until set or until you finish eating fudge from pan remains and need more!
The only thing I can add, is I always seem to need to add more sugar to keep it from being runny.

Obviously, you can add nuts if you like.

As for storage, I have had good luck freezing fudge for later use.

Chocolate Peanut Butter Fudge

2 cups sugar
1/2 cup peanut butter
4 Tbsp cocoa
1 cup milk
1 tsp vanilla
1 Tbsp butter

Mix milk and sugar together. Boil over medium flame for about 10 minutes or until mixture forms a soft ball when dropped in cool water. Remove from heat and add all other ingredients. Mix well. Pour into a greased pan and cool.

Mmmm, good!

thanks for the recipes, made ladycat's today, very yummy. Was a bit grainy and crumbly, what did I do wrong? Cook it too long?

Do you happen to know what the humidity was? Candy of any kind is sensitive to humidity. I'm not good at making fudge, so I'm not a good one for advice, but I sure love when others make fudge! Yum!

OK here is my private 'stash' of fudge recipes...ever hear of Skaarups?

That's the fudge you eat at fancy places and they sliver you off a piece from a slab....they used to have the best site in the world but they closed it down. This site is golden and is on and off the internet; I'd copy if I were you to save.
