favorite jerky recipess

So what is your favorite jerky recipe? For this first batch, I'm using ground (goat) meat- but will be butchering cow soon.

I use very lean beef, and trim any visible fat. I don't care for sweet-flavored jerkies. I usually use some Worcestershire sauce, black pepper, red pepper, garlic powder, dry mustard, and fennel. I don't measure- just by eye and taste. Stuff doesn't last very long, though!

I never heard of making jerky with ground meat??
I use venison mostly, beef is too expensive. Muskrat and beaver jerk well also.
I use a combo of kosher salt, fresh cracked black pepper, brown sugar, liquid smoke(is best flavor additive),ketchup, lite soy sauce. Thats for basic batch, i had hot pepper flakes if i want it spicy. We like to make pemmican as well from our jerky.

for ground meat jerky just roll out ground meat 1/4 inch thick onto plastic lined cookie sheet= freeze about an hour, cut and dehydrate. You mix the spices right in- thanks for those ingredient lists, will try them!
