Oh my, that is making my mouth water something terriable.

I just purchased a 200 pound plus pig about 3 days ago. I got to figure out how to come with a cooker like that before the end of October when we have a family reunion.

In the last picture are you two getting ready to make some polish sausage? Homemade polish sausage is the best!

Boil the bones with a bit of vinegar to bring out the calcium when making soup stock.

How big was that pig? Did you raise it yourself or was it a feral pig?

Frequently, around here we cook them in an "imu" which is an underground oven. Yumm!

I have heard of those kinds of things happening when you go leaving big hot BBQ smokers just a lying around the place. I suspect if you was to leave a mandolin lying out close to the cabbage patch you'd have you a mess of cole slaw to deal with also.

Not a bad looking cooker. I like the way you slanted the opening off of it. Now if you just put a separate firebox over on the left side and a vertical smoker box off the right hand side it would be just about perfect.

But using charcoal is no where as good as using oak, hickory or mesquite Wood. Thats the reason for the separate firebox.

Potentially stupid question...what's that round thing in the front part of the first pic?

Looks yummy! I love a Cuban mojo sauce on roast pig, lots of fresh raw garlic ground up, olive oil, lime juice and sea salt...mmmmm

Wish it was mine, I borrowed it from a camp I used to work at. I did use wood though, just built a small fire at either end out from under the meat so it didn't burn. Maple, I know it is not famed for BBQ but it was what I had laying around, and it came out pretty darn good.

maple was one of the types of wood my uncle used to cut for a lady who smoked hams. maple, hickory, birch and apple.
