South Texas Farm question

I own land in SE Texas. The farmer who is presently farming it only grows crops, cotton, corn and sourgum from April to the end of July. The land lies fallow the other 8 months. I would like to know if this is common in South Texas, and if not what other crops can I grow during the 8 months the land is fallow?
