Big Green Beans

My green beans have gone CRAZY in the last 3 days. I have some that have gotten really big over the last 3 days while I was out of town. Does anyone have a suggestion as to how to use them? I know they won't be the best for eating as is or for freezing. Thanks!

you can shell them out and add them to the beans. i prefer them that way.

Let them dry out and use as next season's seeds, or dehydrate them to feed to the chickens or pigs (rehydrated) this coming winter.

Hey.

Let the beans' skin turn brown and dry. Remove the seeds and use them for next year's planting.

Make leather britches for winter.

When you're ready, throw them in a slow cooker with a smoked ham hock and a couple of dried hot peppers. Cook on low all day... serve with cornbread. Mmmmmm, Mmmmmmm!

Had the same problem last year when I returned from a week vacation.
Someone (sorry, I have sometimers) on here suggested saute in butter until soft and they were yummy.

eta- Had to go back and look, it was drivin me nuts. It was Suelandress that told me and it was boil untill tender then saute in butter and garlic.

I'd say shell them and stick them in with the other beans. I can sit and eat a whole pint of shelled green beans.
