Butcher house to keep flies out?

We butchered our first goat a few weeks ago. Everything went fine except for all of the flies. I want to build some sort of butcher house with screening around it to keep flies out. Anyone have anything like this or have any ideas on this?

We had one in Alaska for hanging sides of moose. Lower half of the walls were plywood, upper half was screened-in.

Flies. One of the reasons I slaughter most of my meat in the winter, when it's cool enough to avoid flies... also less chance of heat spoilage.
