Friend Shot 1900 Lb Buffalo - Good Meat??

A good friend shot a 1900 lb Bull Buffalo on a hunting ranch here in south Texas. He want to know if I want some of the meat. I think I do, but have never eaten buffalo. I've heard it tastes just like chicken :-).

I think I will take him up on his offer. All it costs me is the processing cost.

Buffalo meat is el primo! And it doesn't taste like chicken. I would venture to say that it is the best "red meat" I have ever eaten.

Been thinking about getting one myself. Have had it several times. Very good red meat, lean but still tender, juicy, and full flavored.

Absolutely does not taste like chicken

Oh my! The best steak I have ever had in my entire life was a buffalo steak. Wow! You are the luckiest person around!

Tastes like grass fed beef to me.

Most people have never had truly grass fed beef. :-) Buffalo and cattle are so closely related they're cross-fertile.

The meat is leaner and lower in chlorestrol then beef. DH had a buffalo burger for lunch today.

We used to live on a very large buffalo ranch in SD (no, not Turner. lol)

Something important to note: The buffalo that were shot unsuspectingly were good. Like really lean beef.
The buffalo that had had a chance to get worked up were pretty gamey.

True, meat that is hunted has a much different flavor than meat that is butchered. Some hunters bring me animals they've shot and frequently the meat is only good for dog food since they didn't bleed out the carcass or they used a cannon to shoot it with so the bones and carcass are all pulverized. The method of preparing the beast makes about as much difference to the final flavor as the species of the beast.

We have a game dinner every year in my area, and Bison is the feature and it is the best red meat I have ever eaten. We prepare the dinner and for lunch we have bison burgers. We work on the dinner just to get the burgers.....

That's pretty much been our experience with venison. DH is always very careful with his venison carcasses and the meat is delicious. A friend killed one this past yr and gave us the whole carcass. He had not cleaned it out well and the smell was awful!! We are feeding that to the dogs.

I like Bison and comparing it to grass fed beef is close only its more tender if it's not over cooked. I got mine from a friend who raised bison and he mentioned it should cook faster than beef. I wouldn't say I'd take it over a nicely marbled beef steak but if I ever have to watch what I eat I'll move to bison and live well.

Buffalo does not taste like chicken. It is much leaner than beef and is a tough type of meat. It needs to be cooked long and slow. You can buy a buffalo cookbook at the National Buffalo Association, Box 580, Ft. Pierre, SD 57532

It's only tough if it hasn't been handled properly, as others have already pointed out!

I was raised on bison meat, although I didn't know it until I was an adult! When we were kids my brothers and I thought we were eating moose, but later Dad told us it was really bison. A herd of them had been started in the Delta Junction area of Alaska in the 1930's, and, lacking any respect for fences, they did a lot of damage to farmers crops and stored hay. The Game Wardens knew what the farmers were putting up with, and pretty much turned a blind eye to the fact that most of us were living on bison meat, as long as it wasn't flaunted. In spite of that, the herd grew to the point that it was split and part of the animals were moved to the other side of the river (where they can harass the farmers there, LOL!).

Mom and Dad didn't tell us kids what we were eating when we were little, because children don't always know when to keep their mouths shut!
