Not having a local mill and sometimes wanting extremely fresh flour we go to Whole Foods. You can mill your flour right there in the store from a selection of organic wheats from Montana. There is also talk of a co-operative organic flour mill starting up again in Eastern Washington. Years ago you used to be able to buy flour directly from Centennial Mills in Seattle.
King Arthur is a good substitute if you can't get locally milled, they are very picky about rotating their flour for the finest and freshest. Stone Buhr is also a good brand for freshness as they are stone ground and can go rancid if kept in the warehouse or on the shelf too long.
