Building a pasture - trees? shrubs?

I have a large area of my current hayfield that I'm fencing as the permanent pasture area for my small flock of sheep (coming this year I hope!) and eventually a couple of draft horses. This is a hayfield right now so there are no trees, shrubs, etc. I will be building a shelter (likely 3 sided with the ability to gate at night if needed). I would like to plant some trees suitable for providing shade during the summer and also plant some conifers for wind breaks. Are there any varieties of trees/shrubs that I should avoid? I'm mostly concerned about whether they would be toxic for sheep.

Cherry and Red Maple both have toxic leaves
