this is my recipe for pizza crust:
1 Tablespoon yeast
1/2 to 1/2 cup warm water
mix these two and set aside in a warm place
1 cup very hot--enough to melt 2 Tablespoons butter, 2 teaspoons salt and 2 teaspoons sugar
when this mixture is cooled down some, mix in 1 egg (optional)
add 1 cup flour (I've used self rising flour before just as regular flour)
add the yeast mixture
add enough dough, maybe up to 2 more cups til dough is slightly sticky but easy to handle
let rest while you are browning the meat, making the sauce, etc. I don't usually let it rise very long, but you could if you wanted to. This is enough for two pizzas
if you want to pat the dough out on prehested baking stones--sprinkle a little cornmeal before patting it out
if you want to pat it out onto metal cookie sheets, I usually pour a little (a little--you can always add more) oil onto the sheets and onto my hands to make spreading it out easier.
Then add your toppings I usually add home made suace, then hamburger, then olives, mushrooms and then the cheese.
I then bake it til crust is brown and cheese is melted.
That's what we had for dinner on Saturday.
hope this helps.
