Leg o Lamb for Christmas Dinner

One of the legs from the smallest lamb we butchered became our Christmas Dinner. We traditionally have Leg of Lamb for Holidays except Thanksgiving. This leg of lamb from one of the lambs we killed and butchered last week was EXCEPTONAL. In the recent past we have not had any of our lambs to butcher and have been buying NZ lamb and the NZ lamb just doesn't compare - not even close - of course there is that thing about freshness and all. The lambs we butchered were both over a year old with the oldest being over 20 months old. The difference in taste between a YOUNG lamb and a Hogget makes the wait worthwhile.

Nothing beats homegrown, sounds like you had a great Christmas meal.

toally inexperienced

raising sheep is something I could easily do. I have no experience -with raising or cooking. How do you prepare your leg of lamb?

Hogget is lamb over a year old, but less than 2 years old. They are also known as 2 tooth lambs. They have only 2 of their adult teeth. They have better flavor than lamb lamb, but still tender.

Mmmmm

I cooked a lamb shank for Christmas eve dinner. It was my first time cooking and eating lamb. I must say, the flavor was milder than I was lead to believe and didn't need a bit of mint jelly.

Tomorrow, we're having lamb stew with the leftovers.
