What a great idea - I would love to do this!!!
Why not do just a concrete floor with inlaid radiant floor heating? My MIL's neighbor poured his own concrete driveway using a grid system with 2x4's in 4x4 squares so he could mix it himself, and pour one square at a time. You could use this concept and drill holes in the 2x4 frames to lay the radiant floor system.
Remember, concrete countertops need a lot of support. You could build a countertop from concrete backer, and just do an overlay - check with the local concrete distributor in your area (we have a place called RCS which specializes in concrete staining products, and sells overlays)
