Homemade Cold Cereals

Does anyone know how to make ready to eat cold cereals - besides
granola?

I'd like something from wheat, and something from oats, but can't find
recipes or instructions.

Homemade Grapenuts
Mix:
10 cups whole wheat flour (or combination of grains of your choice)
1-2 cups sugar (or honey or maple sugar)
1 Tbsp. baking soda
1/2 Tbsp. salt
Add:
3/4 cup melted butter
5 cups buttermilk (or thinned yogurt or kefir)
1 Tbsp. vanilla (opt.)
2 tsp. maple flavoring (opt)
or spices of your choice (opt)

If you soak all your grains let this batter set overnight OR bake immediately @350 in 1 or 2 greased 9x13 pans.
Baking time varies with depth of batter in the pan. Bake until toothpick comes out clean or center feels done to a light touch. Cool. Grate cake into crumbs and dry on low heat in the oven or on top of a woodstove stirring occasionally.
Store in tight container. This keeps for several months.

Cinnamon Toast Cereal
approx. 6 cups cubed or thin sliced squares of sourdough bread (1/4 in")
or other breads, bagels,etc.
Set aside...

Melt:
1/2 cup butter
Add:
1 tsp. vanilla
Mix with cubed bread.

In separate bowl combine:
1/4 -1/2 sugar
3 tbsp. ground cinnamon
Toss with bread cubes, spread on baking sheet and bake at 375* for 20-25 minutes. Stir once or twice to ensure even browning. Cool and store. Keeps well for several weeks.

Ok, baking the batter for the homemade "gn's" now. If it tastes as good as the batter tasted and smells, it'll be reallllly good. the kids sat on the kitchen floor licking the bowl clean LOL.

I'll post later when I know how it turns out and what I did....like any recipe I "experimented" with it.

They can HEAR hamburger a mile away......

LOL, glad I'm not alone. I didn't really intend on them to sit there on the floor, but stand there with the bowl and share it nicely. Guess they decided it was easier to do it sitting down on the floor.

It's cooling down now and my house smells sooooooooooo yummy. I've not even toasted it up yet, can't wait, we may have cereal for dinner tonight

I have pre-steamed millet every morning. I put it in the steamer at night and turn on the timer. In the morning I take it out of the steamer and pop it in the microwave. It takes less than 2 minutes to fill the steamer and 3 minutes in the microwave.

That sounds good, but I don't have a steamer, and prefer to not use the microwave.

I'm going to try the cinnamon toast cereal. We have all kinds of bread heels in the freezer. You can only eat so much bread pudding.

homeacremom, thank you so much for posting the recipes. I made both and they are so good. I really like that grapenuts one. I used kefir in mine. After the crumbs were dry and cool, I split it and made one half with dried cranberries and sliced almonds and the other half with dried blueberries and almonds. I gave a jar of it to a friend for her birthday and she just called for the recipe! It made a lot of cereal, I had two nearly full gallon jars. I think I'll try the next batch with part grahm flour.

I used sourdough bread for the cinnamon toast cereal and it was a real treat.

Thanks again, that's the best new recipe to go into my collection for a long time!!

CC, I still have mine drying, but am so far impressed with the flavors, just concerned about texture (another weird issue with me).

Here is what I did, as best as I can say:

5 C. Whole Wheat
2 C. quinoa flour
3 C. oat flour
a bunch of cinnamon, some cardamom, and some cloves
2 TB. Nutritional Yeast
1 TB. baking soda
1/2 TB Sea Salt
1.5 cups demerara cane sugar, powdered up

3/4 C melted raw Coconut Oil
5 C. warmed to touch 1/2 and 1/2 whole milk yogurt and goat milk
1TB. vanilla extract

and then followed direction as given above.

I only have some dried currants on hand, but what a wonderful idea with teh dried fruit...duh moment on my part.

The flavor the the "cake" is awsome, so I'm impatiently waiting for it to dry out and try.

OH, we're having goat tonight instead of cereal, figure I ought to put something substantial on the table after dh's hard day.

Reese, sounds like a good cereal in the making. My crumbs are about the same size as Grape Nuts, but even though fully dry and crunchy, are not quite as hard (which is good, I like it better). Mine are not as dark as the commercial cereal either, and taste soooo much better. Let us know how yours turns out.

Yep, mine came out not as hard (good not too hard on the gums) as the real thing, but very close in texture. I ended up hand crumbling since with my food processer made it too fine. It's nice and toasted and pretty dark, but it could be from the ingredients I used as well.

The flavor though, is MUCH better than the store stuff. OMG, since the goat was taking so long to cook, everyone was pestering me for food, I said, eat the gn's...and they all were raving on how good it is, from the youngest of 5, the picky 9 yr old, my teen and even my oldest and pickiest child...my dh.

I can still taste the undertones of all three flours, love quinoa with it's nuttiness, and the sweetness of the oat, and the hardy wheat. It really is good. I've been told by my youngest he wants to have that every morning! Can't beat that review.

Glad it turned out so well. I'll have to give the quinoa a try, I've never done much with it. I want to add some ground flaxseed next time around, too.

Thanks you olehippy, always looking for something different.

I really liked how only 1/3 cup of the cereal I made stuffed my younger two and my older two (teen and dh) were very satisfied from 2/3's cup. I had a late lunch so didn't eat.

I like using quinoa since it's a good source of protein and vitamines w/o meat, and it tastes great. It's a great protein alternative for veggies/vegans, which we're not, but still enjoy eating veggies and grains.

The goat came out great, so I packed dh's lunch with that, some pan gravy, and frozen peas...to make up for the healthy dinner.

I have made it twice since finding this.
I learned a couple things.
buttermilk is thinner than yogurt and 2 cups of maple syrup makes a thinner batter than 1 cup of honey DUH
a cup of ground flax seed gives a nice nutty flavor.
we are loving it

We have friends from Germany and they eat regular rolled oats as a cereal. Just add milk (they use chocolate milk - yuk) and eat.
