The mother is good stuff! Those are the beneficial probiotic organisms that turn the alcohol into vinegar, so it's like the acidopholos (yogurt) of vinegar.
We don't refrigerate, but you could. Tastes like normal. We drink it, bake with it, cook with it, and I use it as a hair rinse for dandruff (yeast) control.
I've read that ACV is really good for your system as a cleanser. DH's grandma is 94 and drinks a tsp of it in water every morning. She's healthy and spry (but does have gout flareups when she eats hamburger), walks to the grocery store or downtown daily, lives alone in a two-storey house, and is very active at her senior center...
