Canning rutabagas

My Ball book says canned rutabagas get "strong" flavored. Has anyone canned them and if so what did you think of the taste?

Yes, have done that and the results were really yucky!! Now I wash them good, wipe with bleach solution, dry well and then wax them just like the ones you buy in the grocery store. Store in a cool, dry place. I think you could get away without waxing them.

Edited to add: cooking them and freezing is another option if you have freezer space. I like to add them to things like pasties and mashed potatoes so I freeze them on a cookie sheet and then bag them up.

Probably, but I waste enough time here without adding another room to my schedule. :baby04:

I will probably freeze most of them. Its hard to find a cool enough spot to store them. Today I'm drying a few to see how that comes out.
