Turtle soup and rabbit stew, anyone?

Anyone else ready for a new logo? That rabbit and turtle are going to be tough eating soon.

Sorry on the turtle soup. I have never had a turtle make it to turtle soup.
I have always fried them.
I clean and soak in salt water for 4 hours in the refrig and then take them out rinse roll in seasoned flower

My Seasoned flour
3 cups of flour
1 table spoon each of garlic powder, black pepper, salt
Mix all ingredients dry
This should be enough flour for about 8 to 10 lbs of meat.

I take about I cup of flour and put in bag. Take the cut up turtle/rabbit pieces. The meat should be cut up to the size of a chicken fryer cut up for frying.
now roll each piece in 1 cup of milk with 1 egg mixed well in it and place each piece of meat into a bag with the other two cups of seasoned flour and drop into cast iron skillet with grease about 325. Cover with lid and let fry about 15 minuets, uncover, turn meat recover and turn up heat some. Cook for about 10 minuets. The crust should be golden brown and the meat cooked through. I fry chicken the same way only I add a few more spices to the flour.
