How to deal with this??

Here's the situation: we have a very exciting opportunity to promote our farm. Someone wants to get livestock from us, but we really don't have what they're looking for right now. We'll have what they want in a few months, but I'm not sure if they can/will wait that long. We have animals now which aren't quite what they're looking for and I'm concerned that they may not be happy with the animals. So...what to do? *I* think they will be better off waiting, but I'm not sure how to explain it to them.

We really don't want to muck up this particular situation.

How do you "feel" about them from talking to them so far? Do you feel like they will listen and appreciate your wish to provide them with an outstanding product in a few months, or are they in such a rush they cannot wait? If they are in a rush do you want to jeapordize your possible future by even offfering something different than you know they want, and they might not like?
Are they looking for breeding stock or freezer filler? If they are looking for breeding stock, just remember what you sell them today will have your name tied to it tomorrow and your reputation riding on it. If they are looking for freezer filler and it's going straight to the slaughterer and they only look different but are the same quality I don't know that I would be too concerned, what they will see will be the finished product and it's inside that counts. Providing the insides of this particular thing is identical to what you will have in the next few months......
I think it's better to be frank and tell them you want to provide them with the most supreme product you can and to do that they must wait a few months.....if they cannot wait then it would seem they are either short timed (poor planning???) or impatient and possibly impulse buyers....none of which bodes well for a future with them. If they say to you they are sure they want what you have but need to fill a gap right now, direct them to someone else you know who has what they need, they won't forget it. And approach them in a couple of months with your product and see if they are again in the market, if not it will be a reminder of your farm to them and keep you in their mind.
If they are serious they can wait....in my opinion.
And while a happy customer will tell a few people, an unhappy one will tell EVERYONE!

Thanks for the advice! They are looking for live animals, which is why this is a bit tricky. I'm certain they'll provide top-notch care for the animals -- otherwise it wouldn't have gotten to this stage -- but I honestly don't know how long they can wait. (They asked for advice on housing months ago, but I didn't hear anything from them between then and now and I didn't think they were interested in purchasing from us.)

It's an initial email contact...I blow more sales at this stage than any other.
