Question New Mexico Root Cellar

Has anyone ever built an underground root cellar in the Tijeras or Edgewood or central area of New Mexico.
Anyone ever tried and failed.
I am needing advise to be prepared to build one this fall.
I am wondering what materials are needed and how deep to go into the ground.
Is a living roof a good idea.
There are not any plans that I can find on google.

Never built one, but the place I grew up in (Gallup, New Mexico) had a dirt cellar about 10 feet deep and was always very cool (temperature, NOT chic). I think it would have been fine as a "root cellar" if sufficient precautions and adjustments were made to keep the "critters" away from the foodstuffs.

Not much help I suppose,
