More on Homestead Food

Over the past few years we've been learning to deal with food gluts - and we're now to the place where we're not only trying new recipes, but we've figured out a few favorites.

Maybe you'd like to share your favorite meal ideas that use as much homestead
raised food product as possible.

Here's one of ours.
This uses up eggs, lots of dairy, and homemade strawberry preserves.

Homestead Cheese Blintzes are made with
a heavy omelet instead of crepes. The omelet is easier and uses up lots of eggs.

To make a heavy omelet you just add a few tbsp of flour to your usual egg mixture.

Fill the omelet with homemade cottage cheese, top with sour cream and strawberry jam...

Nearly completely homegrown Comfort food.......

Quiche, using soft goat cheese and eggs. Cheese cake using goat cheese. Potato soup (goat's milk and new potatoes and baby onions in the spring, mmmmm).

I like a good frittata.

I stir sauted veggies into eggs (peppers, browned potatos, onions, mushrooms, whatever) and a LITTLE canned artichokes, with ham, and cook it on top on the stove until ALMOST cooked.

Top with shredded cheese and slide it under the broiler for a minute.

Cut into wedges and serve.

A good bread pudding is great, also!

Bread Pudding is a good one! We always have leftover bread hanging around..

I've never made cheese cake with goat cheese...
but now I'll have to try it.

I am the Quiche queen. Everyone loves it. I can't eat eggs cooked in a skillet, unless there is more things than there are eggs. Ever since I had ds 8, I can't eat eggs that way. I get heartburn!
