Storage of yeast.

A 10lb bag of yeast is less than $30.00. Little packets have a wide range of prices, depending on the time of year.

So if'n I buy a 10lb bag, what's the best way to store it, for the longest viability. I would imagine refrigerator, but I am not sure.

I buy SAF Yeast in 1# packages. I usually buy 12-15 pounds at a time. I put the unopened bags into a freezer bag and store them in the freezer. A good quality yeast will last indefinitely in the freezer. After I remove a bag from the freezer I store it in a 1 qt. canning jar, which I keep in the refrigerator.

I don't see any reason why you couldn't store it in canning jars in your freezer. Just make sure it stays dry.

I keep it in the freezer. I've used yeast that was 7 years out of date and it worked like it was fresh. I have some in there that I'm using now, it's dated jun 30 2000. As long as it's kept froze, it should stay good. I leave it in the original package until I open it, then I put it in a jar.

Yep...freezer works good. Just be sure when you use it you let it warm up to room temperature first.

I buy yeast in one pound bags and put it in the freezer.
I use it right from the freezer with no problem at all but I let the bread machine kneed it for me and it warms everything. It will last for years that way.

I bought 12 lbs of yeast and have been using it for the last couple of years. I keep it in the freezer and just take out enough for a pint size canning jar. I put the canning jar full in the fridge and use it from there. Years later it still rises just like it should.

I've been baking for over 30 years and have always kept my bulk bags of yeast in the freezer..never have had any problems.

Got a related question here......where does one go to buy bulk yeast at a reasonable rate?

Bulk food stores. Those run by amish if you can find them.
You will pay less in bulk no matter where you get it.
Who knows, you may be able to get it at Sams.

Yes, it's in the freezer here too.

We buy in bulk from the health food store.

Joel Rosen shared with me that He and his family used to soak potato skins in cool water and the yeast came out of them and floated to the top of the water. They then skimmed this off and used it to make bread. That's all I know about the process.

This would be helpful for those who either couldn't afford the yeast, couldn't store it or couldn't find it. I know it didn't answer ZYG's question but maybe it'll help someone.

I keep unopened in the freezer and the open in the fridge in a tight sealed container and I haven't had any go bad.

Yes, we buy our at SAM'S. I think I've gotten it in a package of two 1lb packs cellophaned together, and another time it was the individual 1 lb pack.

I haven't had to buy yeast for a while so I don't know pricing. I have recently bought unbleached white flour, wheat flour and brown rice from them. They deliver to certain areas and you pick up there.
