What is so bad about it ? I have cooked a few of them over the years and every one of them was really good eating. I have cooked both farm raised and wild ones.

Michan, it sounds like Oilpatch thinks they're cooked without being gutted.
Oilpatch, the hogs are gutted and scraped or skinned before they're cooked. Some people even remove the heads.

A pig roast is a blast, it's a perfect summer time party, family get together type of event, we even have a custom gas fired spit just for that purpose. When I was a kid we had one every summer it was sponsored by a local tavern, they even made T-shirts for the event. Just cooking the pig is a party in itself.

And they're dead, too. Oysters aren't, neither are mussels. I eat whole snails, clams, and sometimes I roast a whole fish or a whole chicken, too.

Sure! I'm planning to slap some tom turkeys in the smoker too! May do some chickens and some goat while I'm at it. Got lots of 'squite wood.

Yep, you need to use non galvanized if it's going to touch the pig, OR burn the metal before using it.

I've been to lots of pig roasts up in Washington when I was growing up. Nothing tastes quite so good as a whole hog stuffed with fruit and veggies thats been slow roasted in a pit. Makes my mouth water just thinking about it.
