Any value to wild chicory?

I have wild chicory here in abundence. I know the oldimers would dry the root and ad it to coffee to stretch it out. Is there any comercial value to the stuff?

Exciting that it is a natural source of inulin--good to have but difficult to find in the natural.

We have a wild plant that grows along the edges of country roads. I've heard it called chickery but I am not certain that is correct. It is blooming right now with bright blue flowers. The plants are two to three feet tall with sparse light green leaves. It is quite pretty until the county mows the road and chops down the flowers. It spreads along the roads, but doesn't get out into the farm ground much. Does that sound like chickery??
