Are you asking what the best meat cooked on the bbq is?

If it is, for me it is a slow-cooked and smoked brisket. Takes about 12 hours with Cattleman's bbq sauce. Makes me want to dance!!!! :banana02:

Pulled pork... wowza.

It's good, it's easy, and it's portable. What's not to love.

About a 100-lb carcass of a hog slow roasted on a spit over wood coals.

All time favorite would be ribs or brisket at JL's near Pryor, OK. Runner up is pulled pork at Brent's in Mountain Home, AR. Um, um, good!!!

Its all good, but I'd have to say that pork is just meant to be bbqed slowly over wood coals with smoke.

You live in Texas and don't know???

Brisket is king. Second are the HUGE beef ribs that they used to serve at the original Dickey's BBQ at Henderson and Central in Dallas.

I make a good brisket but I'd rather have good piggy pork.Inever cared for ribs that much.I like my sauce with a little more vinegar and less sugar/ molasses.Don't want it to taste like it's got syrup on it, lol. Now, can somebody explain to me why folks in Tenn. put a scoop of cole slaw on their pulled pork sandwiches? that's just WRONG...........

Pork, of course. Ribs, butt, any of it. So long as it's done low and slow. If you live where you can grow it or buy it I like to baste the meat with sour orange juice.

Beef and chicken are good for variety, but for real barbecue pork is king.

....Alan.

Dickey's is good, but if you're talking restaurants, Peggy Sue's (Hilcrest at... can't remember the cross streeet. It's between Daniel and Lovers though, really close to SMU and on the side of Snyder Plaza) has the WORLD'S BEST BRISKET.

It's weird- the thing I miss most about Dallas and living in cities is restaurants.

Yep, overall Peggy Sue's is better than Dickey's. Their brisket is about the tenderest I've ever had. But those big ribs that Dickey's had....... mmmmm. And they used to have a huge cheese wheel where you could slice off big hunks of cheddar. Those were the days.

Back in the '80s I used to frequent the old Dickey's as well as Sonny Bryan's on Inwood Road. Eating there was a real experience - it was kinda hard squeezing into those little school desks! But man it was worth it.

Well I am a little biased here.

But here is the link on my home page w/ a pictorial "how to" on a pig pickin.
http://www.clovercountryfarms.com/PigPickin.html

and I love LOVE LOVE brisket. We have a 500gal propane tank that we converted into a smoker.
and after many years doing cook-offs (and winning all that we entered last year ) we have learned the secret to wonderful brisket.

can't beat either of em!

Brisket.... hands down. Slow smoked with a good dry rub, then mopped with oil/vinegar mix. UMMMM

Cooper's in Mason has the best (besides what we do) brisket ever.

there are 2 meanings to "pulled Pork" that I know.

#1 Pork cooked on the bone, that is so tender you just "pull off the meat you want" yum yum yum Thus "pulled pork"

and
#2 Pork that is also very very tender, so tender that when you take 2 forks, it shreds, you take the shredded meat (often mixed w/ various sauces depending on where you live) and have one fine meal!
