Question how to butcher a goat and good laying hens?

Hi I would like to know how to buthcer a goat? Also how to fatten them up without making them fat? And what time of year is best... these are yearling Lamacha does... how long should i feed them and what do I feed?

Is shooting them a humane and safe method...like in the back of the head?

Can I hang them just like I would a deer and start at the back feet and work my way down the carcass?
Do I restrict water to make sure the bladder is empty?

What about aging the meat?

I would also like to know about chickens, what is the best laying breed? Can I sell the eggs as organic farm fresh eggs? would i need some sort of license to do that in OR?

Somebody on here somewhere had recently posted an excellent thread on goat butchering--complete with pics and all. Can't say I remember the name of the post, but I am sure it can be found...

Why are you butchering does? Can't you sell them? Does are pretty easy to sell.

Go to the poultry board with your chicken questions. Many breeds are good for laying, it depends on what you want. Will they be caged, or free range? Do you want dual purpose so you have nice carcasses, or just eggs? Do you want aggressive chickens or docile ones?
