using smoke smoke

Hello. This is my first visit to this site and my question is this. I recently purchased a house with a smoke house. How do I control the heat and smoke? I found the fire pit(approx 10 feet below smoker) and also the vent pipe(chimney). I do not know where or what a smoke shut-off looks like. Any help appreciated. I will be utilizing this mainly for venison.

Hard to picture what you've got, but I've used a 55 gallon barrel for a fire box. Just load it with wood, light it and get it going good then throw a lid on it, leaving a little room for air to get in and smoke to get out.

Smoker

You could look for a damper or chimney cap (like those used on a wood stove chimney) or install them to control the smoke.

Get a thermometer from a gas grill and install it through the door.

Apparently, those issues were not important to the previous owner.

Google "smoker", "smoke house" and "smoking meats" to find more information. Of course, you may wish to utilize your search filters to avoid some "creative" responses from the morally challenged.
