syrup questions

What month is good for taping maple trees? Does anyone have a good link for syrup making processes?

Depends where you live. You need warm days with freezing nights to make the sap flow, but once the buds open the syrup tastes bad. For us that means about one week in February.

I tap in late winter/early spring, depending on the weather. You need warm, sunny, non-windy days and below freezing nights for best production.

Do a Google search for Tapping for Maple Syrup, that should give lots of info. Usually the optimum time for maple syrup here in SE Ontario is late Feb to Mid March, the days have to be just above freezing and the night just below. Hope this helps, Chris

Here in Maine we do it in the spring, when the sun gets warm enough to warm the tree trunks. You can boil the sap down outside, on the grill or on a fire pit. THats what we do. DO NOT boil down sap inside, your walls will all become stucky ewwww.
