Turkey soup recipes?
It's time for soup and I have a lot of turkey to use up.
Help me please

i have some simmering on the stove as we speak
i just boiled the carcas and skin overnight in a crockpot covered with water, some vinegar, leftover celery leaves, an onion or two, some unpealed cloves of garlic, bay leaf..... strained it after about 16 hours of cooking.
to the stock, i added one cup of rinsed hulled barley (not pearled), a couple of cups of carrots thicked chopped, bay leaf......i have let that simmer slowly for a few hours until the barley is thoroughly cooked and i just added some pepper, as much turkey as i needed, the last bit of the leftover turkey gravy....it is so nice and thick and so yummy tasting!!!! My dh will eat his with saltine crackers, my dds' will eat theirs with bread and butter to dip into it...i just eat mine as is
This freezes well also!.
if you wanted, you could add in any other veg you want.

on my post about turkey bones, it was mentioned that the vinegar helps leach the minerals out of the bones, thus making the broth/stock even healthier!

yes, as the above poster said. it draws out all the good minerals from the bone and marrow......if you really wanna help it along, after it has been cooking about 12 hours, pull out all the big bones and break them in two and add them back.....then the marrow can really leachout......they will break easily by hand at htat point in cooking.

we add carrots, onions, celery and home made noodles to the stock after removing bones. picked meat gets added back too.

Haven't done it but I bet dumplings would be good made with turkey.

i made a strong broth, strained it, then added more onions, pepper, salt, creole seasoning, red pepper, etc. and some turkey and brown rice. cooked for about an hour.
just tasted it - it is AWESOME!!!!

I just boil the bones, meat and skin. Remove skin, debone and add back to the liquid, add carrots, mushrooms, potato, onion and celery. Cook until vegys are tender. Divided it in thirds, one for soup, 1 for dumplings and 1 for chicken pot pie. Added more water for the soup, 1/2 a shredded potato and cooked wild rice. Cook until thickened....James

White Bean and Turkey Stew, from Cher Forever Fit
Makes 4 cups
1 cup chopped onion
1 tsp dried minced garlic
1/2 cup sliced celery
1/2 tsp dried thyme
1/4 tsp pepper
1 1/2 oz packet Butter Buds (healthy version....I use butter)
1 tbsp tomato paste
1 3/4 cups defatted chicken broth
2 cups chopped cooked turkey
2 19oz cans white kidney beans (cannellini), drained
1 bay leaf
Spray dutch oven with Pam. Place onion, garlic, and celery in pan and cook over medium heat until onion is lightly browned.
Add remaining ingredients and simmer for 20 to 25 minutes, stirring often.
I usually substitute here and there. The beans make it hearty.

I made turkey tortilla soup last night and it sure was good.
It's really wet and chilly here-that was perfect soup for it.

making soup tomorrow. I had put the carcass in the freezer, but decided this rainy weather needed soup now. (we never get tired of turkey!) I left tons of meat on, so will simmer the carcass for a few hours. I use a dab of balsamic vinegar. then will add the token carrots, onion, celery, garlic. making homemade noodles. (I add dill & garlic to my noodle dough) I may add a bit of tomatoes, as I like that added flavor. lots of parsley, splash of old bay seasoning. lots of crusty bread....pretend I won't put too much butter on...

then just leave them out! the beauty of soup is making it your own. toss in what you love, and it will be so very good.  I always look at a recipe...then adjust it to my liking. sometimes it's exact...often it's squeaked!

Turkey with Flat Dumplin's Soup
Dumplings Recipe
3 1/2 cups flour more or less
1 Cup Water
1 Egg
1/2 Cup melted butter
roll and cut into small squares.
