cupcakes

since it is sooooo like a million below zero degrees outside right now I decided to make some cupcakes. pantry is kind of bare so i took inventory of what I have and came up with something I think is going to be good.

I call em "applesauce oatmeal honey cupcakes with a cinnamon glaze"

the first batch just came out of the oven and they smell really good. Even Jack is begging for one.

Sounds much like a muffin, but whatever you call them they sound delicious.

I'm reminded by your post that I have a German chocolate box mix in my pantry that should be used. I don't usually put frosting on cakes I make but that one might need some.

In case anyone wants it, this is how I made em. i didn't meassure and just eyed pretty much everything but I did keep track so I can make them again.

1 stick butter softened
1/2 cup brown sugar
1/2 cup honey (I used raspberry honey as that is what I had)
1 cup applesauce
2 giant eggs (lol, they were huge)
1 cup sifted ap flour
1 cup old fashioned oats
1/2 cup whole wheat flour
1 1/2 teas. baking powder
1 teaspoon ground allspice (I ground my own)
1 teaspoon baking soda

for the glaze I just did a simple powdered sugar glaze added some cinnemon and vinella to it.

Heat over to 375
I beat the brown sugar and butter untill fluffy
then beat in the honey, applesauce, and eggs.

in another bowl I added all the dry ingrediants and combined (don't forget to sift the flours)

filled the paper cups half full

I baked them 20 minutes which was just right but test yours with a toothpick like any cake.

it made 18 cupcakes

I'll tell you in a minute. just mixed up some milk and have it chilling to go with.

NM LOL I couldn't wait for the milk.

i think it's delicious. It's a little heavy on the allspice, next time I'll do half a teaspoon. Probably stronger because i ground it fresh. but it's still very good. It's nice and moist and not overly sweet so the glaze is perfect for it.

I think I would grind up the oats a little next time. And actual chuncks of apple in it would be REALLY GOOD. All I had was apple sauce though.

WOW, Those look Wonderful! I will have to try that recipe!
I make a Zuchini spice cupcake that Dh really loves other than those I don't usually make cupcakes unless it's a box cake mix.
