Turkey soup question

Has anyone out there made soup from a smoked turkey carcass? I put one on to simmer and it sure smells strong. Before I go on with the rest of the ingredients and maybe waste them and time I would like to know? TIA

taste the broth you've made. If it tastes too strong, dilute with something like wine, or chicken broth. Smoked carcasses can be really tricky. The taste doesn't always translate well to soups.

If you like bean or split pea soup, maybe that's the way to go.
Treat it like a ham hock.

If it's too strong for your taste, divide it into batches. Freeze the excess for later use. That's what I do with leftover turkey, regardless of the way it was prepared. Unless I'm making a huge pot of soup, there's usually too much leftover turkey to do just one batch.

Using a smaller portion (ratio) of the turkey to other ingredients may be the answer. Since I don't know your tastes, it's hard to recommend what you may like and not like.

I like the idea of using as a bean or pea soup base that would go well with the smoky flavor. Thanks for helping me think out of the box!

Smoked turkey broth makes excellent corn chowder, with onion, potatoes, celery, corn, and leftover chunks of smoked turkey. Thicken and add milk or cream at the end of cooking. You could probalby even use up leftover corn and mashed potatoes in this soup.
