Nobody asked, but...

tonight we're having Zucchini Casserole, Zucchini Cornbread, and Zucchini Chocolate Cake for supper.

I actually found two people within 1/4 mile of me that want the stuff. How fortunate is that?!? I told them they can come into the garden and get it whenever they'd like...they can even act like they are being sneaky if it ups the excitement for them!

lol, boo..... we got 2 out of our garden yesterday......oh yea let the season begin.... I have gotten a cucmber and some cayennes, broccolii and a few other things out already also... yea meeeeee..... My husband gets his kicks from his new tractor he bought for 300.00 I get so excited about getting veggies from my garden that me and the family planted....I love it when that happens..

Why don't I have that problem? I need more zucchini...I eat the heck out of that stuff and so do my dogs (yes, they do have gas as a matter of fact ). My plants just didn't do well this year so my replant just has the first few tiny ones on it.

All told, I'll need to dehydrate about 200 lbs raw weight of it this summer for stuff over the winter at a bare minimum.

So...anyone near Norfolk or eastern VA need to offload any?

Got a few zucchini, Mammabooh?

Ours are just beginning to come on. I planted six plants. I know -- I have NO idea what I'm going to do with them all, LOL! The plants are covered in blossom, so I think I'd better come up with something, fast

Haaahaa, such a beautiful plant to produce such a nasty vegetable (I really dislike squash of pretty much any variety)

I do like the blossoms stuffed though.

I get lots of it given to me by kind hearted clients this time of year, and I don't refuse for risk of offending.

I re-gift it, or sometimes I'll slip it into a curry where it kind of disappears

will you share your recipe for zucchini cornbread? I made a squash parmesean the other day (instead of eggpalnt) - got rave reviews from the gang.

I have so many on my counter from picking today, in a basket on my counter from the other day and some in the fridge......

Tomorrow i shall grate lots of zucchini and freeze for muffins and bread.

Do i HAVE to blanch the summer squash (crookneck) before i vacuum seal it? I don't have lots of time to can as i've never done that - that'll come later.

I saw an interesting recipe for zucchini yeast rolls. What else can i do with summer squash and can it be used instead of zucchini for zucchini bread?

There's even some out there that i just couldn't pick today. This is a new experience for me as it's only our 3rd year here the soil is better this year ('ve been working on it).

I think i will try zucchni fries (baked) and zucchni sticks this weekend.

any ideas for me would be great.

I'll type it for you first thing in the morning. All three recipes I made for supper were from my "Joy of Gardening" cookbook. I was quite delighted, because the cornbread took 6 cups of grated zucchini!

Come on over! We'll be having more zucchini and/or scallop squash tomorrow along with some green beans and whatever else I can gather. There might be enough okra for a few servings also (Hubby and Son don't like it, so you can have their portions).

Zucchini Herb Cornbread

6 cups grated zucchini
2 t salt
2 cups cornmeal
1 cup flour
3 T sugar
1 T baking powder
3 eggs, beaten
1 1/2 cups milk
2 T freash basil or 2 t dried

Preheat oven to 350 degrees. Place zucchini in a colander and sprinkle with 1t of the salt. Toss to coat. Weight with a heavy plate and drain for 30 minutes.

Sift together the dry ingredients. Mix the eggs and milk and then combine with the dry ingredients.

Rinse the zucchini and squeeze out the liquid. You should have 3 cups of zucchini. Stir the zucchini into the batter.

Grease a 9-inch springform pan (I used a glass 9 x 13 inch dish) and pour in the batter. Bake for 40 minutes. Cool for 10 minutes before serving. Cut into wedges and serve.

And to think that those two cookbook authors are argueing over who came up with the idea to hide veggies in food! Sounds like a good dinner!

I imagine we'll all get increasingly desperate. I can hear it now, "Mom, what's this green stuff in my pudding?" "Um, that's mint" "It doesn't taste minty." "It's a new kind of mint."

Neither one of them came up with the idea. I have healthy cookbooks 30 to 40 years old that tell you how to hide healthy stuff (veggies, wheat germ, etc), in conventional recipes.
