Baking Trout?

My dad used to cook trout in foil over coals, whole with a lemon wedge and season salt.

I'll be doing this in the oven and have no clue as to temp, type of baking dish (glass or metal), time and can lemon juice be substituted? Covered or uncovered?

I don't know how to fillet them and don't have a sharp enough knife if I did (one more thing I gotta learn!). Any help greatly appreciated. I know trout is best cooked as fresh as possible. Thank you!

I would guess 450 degrees F. for thirty minutes, and yes to the juice. If I were cooking trout on a conventional stove (I prefer hardwood coals) I would use a HOT cast iron skillet under the broiler.

I don't have a cast iron anything I have glass and metal. There was a dutch oven, but it's hidden in a storage unit.

Wrap in foil with lemon juice and butter. You can do them whole. Bake at 450 for 20 to 30 mins depending on the size of the fish. They are good this way. Sam

DON'T USE LEMON JUICE IF WRAPPING IN FOIL!!! You may get a nasty reaction. Use parchment paper with lemon juice and you'll be safe. About 350 deg for about 20 min. Throw some olive oil on and some nice fresh herbs. Yum. Trout En Papilote. That's French for in a packet.

My foil isn't heavy enough to wrap with. I'm thinking of using a glass dish, lightly oil bottom, season fish with butter, lemon juice and season salt (don't have lemon pepper), then cover dish with foil and bake. Sound like it'll work?

Sure will, as long as the foil doesn't touch the lemon juice it will work. Sounds like a good dinner coming up. (Scott's right about the italian dressing.)

I know...But I don't have any I need to go shopping tomorrow. I'd have gotten things tonight, but the nearest store open is 30 miles away. (wally world)

Olive oil, white wine vinegar, garlic, basil, oregano, a little sugar (just a pinch) salt, pepper, shake it up and-- voila! italian dressing. Darned if I would drive to china mart at this time of night either. I would make do with what I have on hand and like it a lot cause I didn't have to go to the store to get it.

Mom's Lake Trout Recipe

1. Stuff the trout with as many sliced onions as the cavity will hold.
2. Wrap the trout in brown paper from a grocery bag (use the paper that does not have printing on it).
3. Wrap the paper-wrapped trout in foil and bake at 325 until done.

When you unwrap the fish, the skin will stick to the paper and peel off when removing the paper. The paper will also absorb most of the fish oil.

Enjoy the trout!

What Cabinfever said, and if you want the wood flavoring -- use hardwood chips (fruit woods are best) - moisten a little, wrap in foil pouch, punch a few holes in foil - place in oven with fish ... or place the fish on a piece of wood prior to wrapping in brown paper bag...salmon on a cedar plank is great.

I have plenty of apple trees, would those work? Does the wood/chips need to be fresh? Some of the trees were taken down several years ago and the cut logs and branches are stacked.

Cabin Fever has it. We used lemon wedges and bacon strips instead of onoins.

Place a piece of 1/2 cooked bacon in the cleaned fish. Place in microwave and listen. When you hear 2 pops (the eyes), it's done. Add butter & lemon.

Silent Crow --oops sorry about delay in getting back to you. I've always used dried wood -- not sure what results you might get with green wood -- other then it makes a lot of smoke?

What did you end up doing?
