Easy and Simple rice recipes?
I'm getting to that ~lovely~ time when I'm braindead and can't come up with a new recipe. We have tons of rice but outside of stir fry and etc, I can't seem to do anything with it. Hubby HATES rice pudding with all his might so that's out the window.
If you have any recipes, I'm all ears! Thanks!

We always enjoy beans and rice. Black beans or kidney beans, rice, taco or chili seasoning, a little salsa and maybe a touch of cheese.
I also do chicken and rice which is just cooked chicken, rice cooked in chicken brother, teriyaki sauce and soy sauce.

If you like lentils you can cook equal amounts of white rice and lentils together and serve cooked onions over the top....not browned but just sauteed in butter till soft....lol is there a term for that? :baby04:
I make rice pudding using coconut milk and raisins and it is better then the average rice pudding- well, I think so anyway! Maybe he would like it with the coconut flavor better? Just pm me if you want the recipe!
I also have a chicken burrito filling with rice in it....it's way easy and very good if you want it!

chicken broccoli rice cheese casserole
Really simple and even the kids love it!
about 2 cups leftover chicken, cut up
2-3 cups cooked rice (depending on how much you want to make--I use 3 cups for 6 people)
some cooked broccoli (about 1 qt baggie frozen from my garden)
either 1 can cheddar cheese soup OR about 2 cups homemade cheese sauce (white sauce w/shredded chedar cheese added to taste).
some milk to thin if you use the canned soup
Mix all together, put in 9 x 13 greased casserole, top with some shredded cheese and bake 30 minutes in 350* oven.

Theres always risotto, too. Lots of extras you can toss in.
I like rice with a touch of real butter, salt, garlic and either parm or romano cheeses.
Or added to broth for soup.
Spanish rice: can add either canned diced tomatoes or fresh salsa.
I use rice instead of noodles alot. Great topped with gravy of any kind.
Can also eat it warm with milk, sugar & cinnamon. Sorta like cereal.

Lowcountry SC Red Rice (or in my house, it's called 'rice and maters')
2 cups of rice
4 cups of water
2 to 3 tomatoes cup up (or a can of diced ones, or a pint of home canned ones)
4 T margarine
salt and pepper to taste.
Microwave on high for 22 minutes, covered.
Sometimes, I throw in some chopped peppers and a few minced onions.
Quiet yummy.

Curried anything on rice... mmmmm.
Stir it into soup.
Cook it and mix with equal parts lentils, seasoning, some sauteed veg and a bit of white sauce or tomato sauce, and bake like meat loaf
Chicken or turkey a la king over it.
Sushi -- even the vegetarian kind.
Fried seasoned rice (use leftovers, a bit of diced onion, etc.)
Jambalaya.

Chicken Red Rice
Rinse off your favorite type of rice (jasmine rice is nice but short grain will do), put it in the rice cooker and add the proper amount of water. Put a couple of pieces of chicken on top of the rice and then pour some spaghetti sauce over the top of that. You can also add things like chopped onions or chopped green peppers or black olives, too, if you like. Press down the rice cooker switch and wait for it to make it's happy "DING" sound when it is done. Yum!

Every rice recipe is easy if you have a rice cooker. Anything except meat or beans will steam cook right along with the rice. (Mushrooms, onions, anything...) Add a little chicken broth when you are cooking it, and voila, it will be like old fashioned chicken and rice.

Brown one pound of ground meat of your choice, with one chopped onion - salt and pepper to taste. Drain meat if need be.
Chop on small head of cabbage.
Layer into a 2 quart or large casserole ... Cabbage, browned meat & onions, 1 cup of raw rice, 1 can of Rotel Tomatoes, 1 sm. can tomato sauce, 1 cup of water - salt and black pepper to taste.
Bake in a 350 degree over for 90 minutes.

I have done tons of variations on this one, and it is always a hit.
I don't bake it tho.
We call it "Cheese Rice"
Using a stock pot, I make rice in chicken (or duck or rabbit) broth,
to 5-6 cups cooked rice I add one or all or any combination (depends on what I have) of the following:
cooked chicken, or duck, or rabbit, or goat, well you get the picture.
one can of rotel tomatoes
about 1 cup grated cheese or 1/2 log of velveeta or 1/2 cup powder cheese.
about 1/2-3/4 cup frozen mixed veggies or broccoli or green beans, whatever I have in the freezer. Put these in right before the rice is finished so they will be good and hot all the way through.
Give it all a good stir, add more broth if you need to (but the rotel juice usually is enough) Add garlic, cumin, or chili powder, celery salt, or whatever seasoning you like.
If I don't have rotel or canned tomatoes of any sort I have thrown in a can of garbanzo beans or just put in more seasoning and skipped that part.
This is good with a salad and biscuits.
Or by itself as a one dish meal.

I try to keep about 2 cups of cooked rice in the freezer just for Fried Rice!
when I have any leftover cooked meat-a little or a lot, I chop up some onions and sweet pepper and whip up some eggs.
Then, I brown the rice and veggies a bit and add the meat. (If you don't have any at all, that's good too.) Then I add the eggs and cook it all through.
Great for breakfast!
Also, any kind of leftover cooked veggies can be added too.

Another thing I do with leftover white rice is make a rice salad.
Take cold rice,
add whatever fresh veggies you have i.e... tomato, bell pepper, onion, celery etc...
also good are pickles, chopped eggs etc..
Then for the dressing I use oil/vinegar with seasoning. I usually use my fresh rosemary and garlic, salt/pepper and a dash of cayenne.
Let it sit in the fridge for an hour or so, and stir real well, it is so so good!

Crispy rice patties
Make extra rice (4/5 brown + 1/5 wild is really good). When cool, mix with egg or two depending on quantity, a little flour, maybe a bit of milk, form into free-form patties and fry til crisp in a little oil.
Serve with eggs and bacon, burgers, beans, with syrup like pancakes......or melted cheese...or....peanut butter!

my kids love this one. carrots, corn, peas, onions, green peppers and rice, with kielbasa slices and gravy. makes a great casserole. we have been known to substitute chicken and gravy for the kielbasa and then serve it that way as well. it's fast and easy.
