Favorite winter squash (to eat, not grow)

I'm trying hubbard for the first time and really liking it.

Right now my order of preference is

Hubbard
kabocha
acorn
carnivale


What kinds of winter squash do you like/recommend?

We love the kabocha and it's been a fabulous seller for us @ the farmer's market.

Blue Hubbard and Kabocha win hands down. Followed closely by Sweet Dumpling, Delicata (also called sweet potato squash) and Turban.

I like acorn, but I've found that the butternut always gets eaten first around here. It's just so nice and meaty.

I've tried hubbard in the past, but must not be preparing it right 'cuz mine is never very tasty.

Butternut, Delicata and Sweet Mama. The drier the better so that I can add lots of locally made butter.

I've not tried any other winter squash than butternut, but I love it. I have a recipe where one cubes a butternut squash, tosses in butter, parmesan cheese, garlic and parsley and then bakes until the squash is soft. It's got to be one of my favorite veggie dishes.

Acorn squash...

Butternut squash makes GOOD shoestring french fries

And there's spaghettin squash, too...mmmm, in a cream sauce...oh yeah!

My SO tells the story about how his mother (when he was young) was given what she thought was spaghetti squash from a neighbor. She baked it, served it up...all the kids tried to eat it. tougher than leather. nasty stuff. but...they were poor and she'd cooked it so by gum! those kids were gonna EAT IT!

Neighbor comes by the next day, and she laughs and asks how on EARTH do you cook that squash...I musta overcooked it or something because it sure was tough....The neighbor looks at her and just says "those were gourds".

Butternut with butter and brown sugar!

Also like spaghetti sauce, but made into more of a casserole ... scoop out into a dish, mix with sauce then cover with mozzerella cheese and bake until it's brown and bubbly.

I like to bake a Hubbard, cut it in half when done (easily pierced with toothpick), remove the seeds, peel and mash it. For each cup of squash add:

1 Tbs. butter
1 tsp. brown sugar
1/8 tsp. ginger & 1/4 tsp. salt
Beat well with warm cream or orange juice (I prefer orange juice) until it is the right consistency

Sprinkle the top with raisins or nuts and crushed pineapple

I prefer pumpkin, but recently discovered that I do rather enjoy butternut as well. I've got a couple dumpling squash waiting to be tasted right now too. I know I don't like acorn squash, and I haven't tried spaghetti squash yet.

I don't have a favorite winter squash, I've never really liked any that I've had much, but I decided to try out different varieties this year since the local grocery store had a bunch. I've been taking out and saving the seeds before cooking any of them so I can plant them next year. I figure what I don't like I can always feed to the goats and chickens or trade/give to neighbors and friends.
