Just a coincidence?

This morning when the kids brought in the eggs I was a bit frustrated. There were over 11 doz eggs floating around the kitchen! I said to my son, "What am I going to do with all these eggs!" At about 10:30 am another friend arrived to pick up a few chickens to add to her collection. Her daughter and SIL are leaving for his home country (very poor, third world) tomorrow where they live and work about 1/2 the year. She wondered if I had any fertile eggs that I could send with them! I immediately carefully packed up 3 doz Maran eggs for them to take with them! I am NPIP tested so I sent along that paperwork as well (though they didn't think they needed the papers - I figured it couldn't hurt). So anyway, I'm praying that those eggs will travel well and grow to be healthy, useful chickens in this very poor area of the world! How often do we get the opportunity to help in such a simple way?

Your story made my day. It is just this kind of activity that makes homesteaders & homesteading special.

Wow! Hope they make it there in good shape! That's really neat.

What are you doing with the other 7 dozen? LOL! Nothing like being buried in surplus!

I remember that feeling! We had 10 layers whom I was told would maybe give me 6 eggs a day at the most....year right! I got 10 eggs a day, 7 days a week. ROFL We had lots of eggs, gave them away, had egg noodles.....oh it was crazy! Good for you for passing them on.

It has taken me a while to get to this state, but I've finally learned not to get uptight when the fridge fills with eggs. I've had as many as twelve dozen in there at a time, but before I completely ran out of places to put them some good outlet for them has always come along.

This is really going to be put to the test come August when the new birds start to lay.

LOL...I hope they make it, what a great way to get rid of unwanted eggs.
I also suffer from egg overload. We always have more eggs in the fridge than anything else. There is a farmer's market that just started in my county and I'm thinking that would be a great experiance for the kids....hmmmm

The problem is that there's no room in the fridge! I will get rid of about 4-5 more doz tomorrow when I do a bunch of running around but I still have a lot of eggs! Part of the problem is that I always hatch (chickens and guineas)and this year I am not doing that. Between the chickens and the guineas I'm getting over a dozen a day. I need to cook some up for the dogs, have the kids make devilled eggs and do an omelette night. I was so excited about the whole thing that I just had to share!

The only thing that saves us, is that my husband takes any extra doz.'s to work. His coworkers just about mug him every time and they all insist on paying for them. The only drawback, is that my hubby mentioned that we needed egg cartons. Now I have dozens and dozens of egg cartons to store...along with the eggs *LOL*.

My greataunt always made angel food cakes. But needed freezer space, and pressed an AFC on every visitor, and probably fed the yolks to the hogs and dogs.

Are you selling any? It's what I do.

The eggs with the good shell quality go into the sale eggs. The imperfect eggs we eat or give to friends, relatives, or neighbors. Haven't yet gotten to the point of needing to feed them back to the hens or anything.

Using the Joy of Cooking, Eggs Benedict for one takes one more yolk than white, and spinach and cheese souffle takes one more white than yolk and between the two of them you can use up a lot of eggs.

Don't forget Grand Marinier souffle for dessert.

I totally agree. It sounds like these eggs are going someplace that they will really be needed and you got them all just in time to be sent out. Almost like a plan came together?

I have a kid that would do that in a heartbeat!

I have enough friends and family that will take eggs, it is just a matter of connecting. Thanks for all the ideas though! I'll put DH onto the fancy stuff. I stick with the basics or we end up not interested in dinner Pretty scary when we have 3 kids that eat everything in sight

Old fashioned sponge cake uses equal numbers of yolks and whites... and the other two ingredients are simply flour and sugar. Which makes it a cheap treat... and with the berry season just starting, what could be nicer than strawberry or raspberry shortcake? If you want a recipe, please PM me.... but I'm sure there will be one or more in the Joy of Cooking.
