Funny thing is I bought some today! I plann on boiling then deboning and then cooking noodles in the broth and adding the meat back. We always love noodles this way. We use the no yoke kind(like it does us any good with all that pork fat LOL).

Cook the pork bones and add the beans (presoaked) to the juice adding more water if needed to cover; de-bone the pork and add back to the pot. You can add chopped onions, celery, carrots, tomato and hot peppers (optional) when adding the beans; bring to a boil then let simmer; covered until beans and veggies are soft. Add salt to taste. If juicy enough I like these beans over rice.
Simmer (to cover with water, bring to boil, lower heat until water gently perculates, cover with lid and continue cooking) the pork neck bones in water until tender (will take a while). Then add sliced/shredded cabbage, diced onion, diced potatoes, some diced celery. Don't add too much water. Just enough to cover. Cook until all vegetables are nice and tender. Can season with salt, pepper, marjoram, bay leaf. Tasty, filling and cheap.

You'll need a pressure cooker, celery, onion and some salt and garlic and pinto beans. Something for spice or heat. Put in pressure cooker for 45 minutes 20lbs pressure, let cook. Utterly divine if you add vinegar and a tad of sugar. The pressure cooker is what does the trick. If you don't have one, simmer (not boil) a long, long time.
PS. Get a mess of collards, cut up and put in your pressure cooker, 2 smoked ham hocks, dry pinto beans, vinegar, sugar, hot pepper flakes, salt, onion, garlic and celery and cook to smitherines. Incredible taste, tender meat and beans, hot pot likker that will cure all that ails you.
'Round here, we just put them in a bit of water, add a teaspoon of vinegar, salt and pepper to taste. Add one chopped bell pepper, and one chopped onion. Cover and cook all this till the meat is coming off the bone. Hmmhmm, good eatin', especially if served with some cornbread for the soppins and a side of baked sweet potato.

Last week I cooked a mess of neck bones with noodles. When everybody had eat their of it, I saved the rest. Several days later I added canned tomatoes and some leftover vegetables and turned it into a wonderful pot of soup.
Neck bones are like any other meat. It requires your favorite seasoning to help add flavor.
Good lord Moopups, take them neck bones and put them in a pot with some cubed up rutbags. Simmer till the bagas are good and tender and enjoy!!
My mon always made neck bones and egg noodles. Them's good too.

Moopups, the beans will be good with the neckbones and also good for you. I am diabetic and was told beans kind of helps level out your blood sugar. Nothing like good old beans and anything. Got to have a little cornbread too!
