Elffriend is correct. Fat affects your BS very little.

I think that they want us to cut fat so that we lose weight faster: the less of you there is the less insulin your body needs to produce. When I weighed 170 I needed more insulin than I did at 140.

I worry about carbs first, not fat. Low fat protein keeps my WEIGHT down which makes my blood sugar more steady.

test 2 hrs afters eating? It depends on how long it takes for your stomach to empty. try testing 1 hr, 2 hr and 3 hr for a light meal. See what happens. For me the larger heavy meat meal takes longer.
