My dad likes the King Arthur AP flour for generic uses.

I would use corn starch, mix it in with the cold milk. Pretty much what Sara in IN said!

I like the Pamela's pancake mix. If you had something like that on hand it would work too.

We use a flour that is one part rice flour, one part corn starch, and one part tapioca flour. Simply fabulous! Using just straight rice flour is really gritty; and it's almost impossible to make homeground rice flour in the Vita-Mix!

So do you mix your own?

I got a bag of AP flour that was gluten free yesterday. Not sure what is in it yet as I was in a bit of a rush, but it will be nice to have.

I would use cornstarch. I don't remember the brand, but I've gotten cornstarch in the grocery store that is marketed as GMO-free.

For those of you interested in spelt, here's an excellent source. http://smallvalleymilling.com/ Callieslamb, if you had spelt that tasted nasty, it was probably stale, which won't be a problem with Small Valley. They're my neighbors, and are very careful about freshness of their ground product.

Spelt has gluten. Not as much, but it still has some.

DH made mac-n-cheese for dinner last night and used arrowroot instead of the flour when making the cheese sauce and it was just as good as usual. I just wish the gluten free pasta tasted the same. It was still yummy but just not the same. I bought our arrowroot from NutsOnline which is also where I've bought different nut flours. Good service but pricey.
