Cut it with a saw and install a tee. Turn water off first and expect to get wet when it drains. Use the proper cleaner and glue. Good to go.

Use a "saddle valve"

The saddle valve is one of the easiest plumbing fixtures to install... next to the venerable garden hose.

A marvel of simplicity and ingenuity, it can provide a low volume water supply for a variety of appliances using 1/4" inlet tubes, without the necessity of soldering, cutting pipe, or drilling.

I have seen lots of saddle valves fail. PVC is so easy to modify, why risk it.

the tech manual for our new fridge said explicitly not to use a saddle valve.

If it's PVC it would be easier to just cut and glue in a tee.
If you're in a jaunty mood you could drill and tap a hole and thread in a nipple and go from there. I've done that at a joint for the extra "meat" as PVC can be kinda thin...

If you do not have the tools (tubing cutter, primer and glue) and do not want to buy them for this small of a project, you can get "Watts" fittings. The fittings are pushed on and grip the pipe with a internal collar and seal. Use a saw to cut the PVC and install the fitting by pushing it onto the pipe.
I have used these fittings for years in different plumbing repairs and have not had any of the Watts connectors fail (eight years and still going for the oldest connector). You can buy them at any well stocked hardware or big box store.
