Pan-fried venison chunks

I like taking all the little bits and pieces and frying them up in a very hot greasy pan. Last night was the first meal of venison in a while - since I didn't get a deer last year. Oh man, tender, flavorful, and it mixed perfectly on a bed of wild cracked rice!

And by the way, the buck I got this year gave up 59.4 pounds of venison. Wow.

Yep, that sounds good. I went to canning venison for the first time this year. Had some left over and that's what I did, fried it up in some hot bacon drippings. Tried some of the canned stuff, now I am hooked on that as well. Gonna have to really get after some hunting time now. I need more than I thought I did.
