Well, I stuck a deer in my freezer today!

Yep, I went down south to a town to pick up some electrical supplies, then I headed over to the tag agent and renewed the tag on my jeep, and then I drove over to my sisters place and had a look around and visited for a while. Then when I got ready to leave, we dug around in her freezer and I got my deer back that I had sent down to her place to keep for me since I didn't have any freezer room. I sent the deer down to her last November.

I already had one deer in the freezer and was needing room so she took it to keep for me. I told her to go ahead and eat any of it that they wanted. Well they didn't eat any of it. So I got a whole deer to start eating on, and it's not even deer season yet! I guess I better get after it so I'll have room for this next years deer.

A year old deer? Hope you have an industrial sized crock pot, or a smoker. It's probably only good for dog food or jerky.

You be right,

I seen a TV documentary about people how live in the frozen wilds of Siberia, and they have found and eaten frozen woolly mammoths (frozen since the last ice age) so a year old deer hell that would be still fresh I would give it a go, I guess it will depend on how hungry you are. If you have a bandsaw I would cut of a leg and thaw it out put a nice rub on it and roast it . they eat "high pheasant" in England and that is hung until the feathers fall out .

i just finished my breakfast of 10 month old venison if it is properly vacume packed and frozen i could serve it to you at 2 years and you couldn't tell the difference.

meat loaf with pickles and catsup , onion, green peper

sloppy does this is the venision version of sloppy joes

spagetti , chilli , stew ,tacos you name it i have put venison in it.

now i cut all the talow and silver skin off and gring all but the back straps , tenderloins , and a few large cuts from the hind quarters then pake into food saver bags and freeze our family just uses more ground meat than anything else

i also make a batch of brats that are 50/50 pork venison

sunday night while we were eating the meatloaf my wife said to me , you know if i didn't know this was venison i would never be able to tell.

i have also passed it on people several times who forgot to ask and they had no clue it wasn't beef.

What else do you put into your brats that are 50/50 pork venison?? they sound nice for a summer BBQ or in a winter casserole.

If you have a good deep freezer meat will last a long time. My chest freezer out in the barn is set for 0 degrees. I have been eating a doe I shot last weekend of shot gun season in the middle of Dec last year. I also have some ground beef from a down cow thats three or four years old I still eat that and it is fine. It most be old, processing of down cows has been illegel for some time now!

We are still working on deer from last year and no issues with taste or quality. like stated above it is how it was packed and frozen. When i get more to replace it then it becomes dog food and they love me for it

Well I don't have a problem with freezer burn on my deer since I'm the one that process it and wraps it. I always place the steaks, roast, burger, in a plastic bag and roll it up real tight. This squeezes the air out and then I tightly wrap it in freezer paper.

Over night I thawed out a roast and this morning I sliced it up real thin. I then pan fried one slice of thin steak and had steak and eggs for breakfast. No freezer burn taste at all.

For the last month or so I have been cutting out all the pork products out of my breakfast cause I know I'm eating to much pork fat in my diet. So what I've been doing is eating a fish fillet for breakfast instead of bacon or sausage. Well now I'm gonna start having venison steak to eat with my eggs also. So from now on as long as I've got the fish and venison, I'm gonna have either a fish fillet or venison steak for breakfast.

In order to do this I have to freeze the steaks or fillets individually on a sheet of wax paper. When frozen hard I bag them up so all I have to do is reach in the freezer and pull out one steak or fillet for breakfast. Works good this way.

I'm eating ground venison from '04 and know that there's some older in the "bulk" freezer. Everything goes into ZipLoc bags and seems to hold forever. We put 1½# in the quart size and 7½# in gallon bags. The '04 packages are just as red as the two doe put away so far this month. However, it's only ground meat that we never worry about for long storage. Chunks/roasts are used up within a year since we can't get all of the air out of the ZipLocs.

I regularly keep venison for a year in the freezer. I package "one meal 'slabs'" of meat... this way, if there's discoloration, I can trim that off. Still have some two year old venison hidden in the freezer somewhere... still mighty delicious.
