What do you do with Green Tomatoes?

What if you grow an abundance of tomatoes that are green and not yet ripened?
What are your ideas to use them? Process them? etc.

Oh no, not the fall green tomato fever that is going around...there's several other threads going on about that same thing. There's one about fried green tomatoes, tasty indeed, and green tomato relish, which I can't say I have ever tried. Me, I just set mine in my porch to let them ripen as they go.

lets go.....jelly preserves jams,sweet pickles,dill pickles, relishes ,picalili, chow chow ,green taco sauce i even read in Little House on the prarie Ma made pies with it that pa thought were apple pies, havent tried it, but plan on it.

Pickles, green tomato mince meat, pie, jam , relishes and fry them.

Talking My favorite

Green Tomato Bread
From Carrie Anderson

1 c oil
3 eggs beaten
2 c sugar
2 tsp Watkins vanilla
2 c ground green tomatoes
3 c flour
1 tsp salt
1 tsp baking soda
2 tsp Watkins pumpkin pie spice

Combine all ingredients in order. Pour batter into 2 greased loaf pans. Bake at 325 degrees for 1 hour until done. Variations use 1 cup green tomatoes and 1 cup of grated apples.

sounds horrible! Though I suppose Shrek might have a knack to turn a sows ear into silk purse, so you never know?

Fried green tomatoes...Yes, but how much of that can you really eat when you have a couple hundred pounds of green tomatoes!
The other suggestions sound great. Keep them coming.

Bread is new one to me. Sounds good. I would guess work for cookies too???? I will have loads of green tomatoes too it looks as so late ripening.

Here's a Green Tomato Pie recipe that is wonderfull. Be sure to use the crust recipe with it as it adds lots of flavor.

2#'s green tomatoes (thinly sliced to = 4 cups)
1 1/4 C sugar
5T flour
2T lemon juice
1/2 t ground cinnamon
1/4 t salt

Pie Crust
3 C flour (more or less)
1 1/4 C lard
1 t salt - rounded
BLEND
1 egg - beaten
1 T vinegar
1/3 C cold water

Bake in a 400* oven for 50 - 60 minutes

Hope you like it. It does taste like a really good apple pie. Everyone I have made it for loves it. I have been wondering if you could can the green tomatoes. Has anyone canned them? Jan

i hear they are great for letting polititans know what we think of them! we wrap some in news paper and put in the cellar. when we get frost am planning to make some green tomato salsa , have to use a net recipe that i found . had some that was better than red salsa still hope the frost holds off another two weeks as we still have corn growing in the field! think i'll pass on the tomato wine too, the some nice peach or pear wine with a green tomato pie........!
