Frozen taters

The fall work got a little out of hand this year. I grew potatoes this summer for the first time. I harvested the russets this morning. It turns out the potatoes are only an inch under the surface. I thought they were deeper. The ground was frozen about an inch and a half deep so some of the taters froze. I was able to dig them with a spade so the ground might not have been frozen real solid.

Can they be used? Could I bake them and mash them and freeze? Worst case senario, the chickens like then.

If they didn't freeze all the way through, only the frozen portion will be affected. You'll find out soon enough as that part will start to go soft. Keep an eye on them and you may find that they aren't damaged.

If they aren't green or soft they are okay to use.

I left a box of taters in an unheated building all winter a couple years back. Didn't hurt them at all. They were reserved for planting and grew just fine.
