Sweet potato slips

I have a few sweet potatoes in jars and they are starting to grow. Now my question is how do I go about removing the slips to separate them from the potato and put them into their own jar? Do I just cut a little bit of the potato right under the sprout or do I need a good size chunk of it to keep the growth going? Will the main potato start more slips once the currant ones are removed?

Also I have a couple I unknowingly set upside down in the jar and the starts are coming off the bottom as well as some roots. Should I just turn the whole potato over and remove the starts or let it the way it is and remove the starts as they come on? Thanks.

Just break the slips off gently at the potato and put in water. Leave the whole potato in water as it will set more slips.
I think I would just turn the other over.

Break off the slips when they are between 6" and 8". Leave the tuber as is and it should grow approximately the same number again. One can usually figure on 3 pickings. I've got one tuber right now with about 20 slips forming after 3 weeks in water. Another is forming about a dozen after 55 weeks. After 2 pickings last year, left it outside in the water all summer and brought it in with the 6 slips which would have been the third picking. Picked them off 3 weeks ago and now starting over again.
