When to pick white clover

I'd like to make some tea using white clover.

When is the best time to harvest the flowers? When they are teeny, blooming, or when they've started to brown & go to seed?

Collect flowers early in the season, when they become ripe and dry. Once fully dry, they can be crushed or ground to powder. Later in the season, they may carry a harmful mould.
