hybrids and op's

will a hybrid cross with an op variety, making it unsuitable for saving?

Yes to crossing, perhaps for saving seed. It depends on whether or not you want a plant like the parents or want to start your own hybrid!

If you grow an open-pollinated plant beside a similiar hybrid plant, the seeds of both may be F1 hybrids. The results of such crossing would not be known until those seeds were planted. Saving them or not depends upon what the seed will be used for. You could not distribute them to others as pure seed but could plant them for yourself.
