rhubarb jelly!

Oh my goodnes . . . . . this stuff is sooooooooooooooo good! I need to grow more rhubarb. How am I going to choose between making more jelly and making lots of pies? Definitely have to plant some more.

And ice cold rhubarb juice, so so delicious and it mixes well with any other fruit or berry juice. Makes great wine too!

Recipe please! I have many plants that need harvested and I wanted to try something different. I can only find recipes that call for strawberries, too....not what I want. Just dropping the strawberries may cause those not to set up right.....so I'm hoping you'll post yours!

Rhubarb upside down cake:

Butter a 9X13 baking dish & spread 5 cups 1" pieces of rhubarb. Over that sprinkle a large box of strawberry jello and 3/4 cup sugar. Mix up a box of white cake mix, spread that on top & bake @350 'til done.

This is melt-in-your mouth yummy served warm with whipping cream. I know, that sounds like a lot of sweet but remember rhubarb is really bitter, besides - calories don't count if you eat standing up.

I am not sure which recipe fffarmergirl used for her Rhubarb Jelly, but I have used this one on Taste of Home's website and it is very good. Rhubarb Jelly Recipe | Taste of Home Recipes
